Is it possible to connect a Nextion display to the Reef Pi that communicates via the RX TX pin?

I don't think it would work, I think the best option is a tablet connected over your wifi network as they have a virtual keyboard that appears when you click inside a text box. Another option is to use an HDMI touch screen but with that you need to install the desktop version of the OS which does use a lot more resources and in theory isn't as reliable as there's a lot more running in the background. The Raspberry Pi Zero 2 W does have some lag with the desktop version so it would be best to use a Pi 3/4 if you went that route.
